Cupcake Monday - Red Velvet!

After last Monday's cupcake debacle, we were happy to be back on the cupcake saddle once again!  I selfishly chose red velvet as our flavor this week and man was I glad I did!  They turned out to be my fav so far.  Here's what went down:

Need:
1 box of red velvet cake mix
1 package of chocolate pudding (3.9 oz size)

Mix according to package and blend in the dry pudding mix at the end.  Cook according to cupcake instructions on the box.  Cool before frosting.

Frosting:
1/2 cup of butter or margarine, softened
8 oz cream cheese, softened
16 oz powdered sugar
1 cup of thawed Cool Whip
Optional - White chocolate shavings

Blend butter and cream cheese until smooth.  Add powdered sugar and mix well.  Use a whisk to add Cool Whip.

I got crazy and inserted a squirt of frosting in the middle of each of these before they got frosted.  The frosting is perfect - it's cream cheese, but the Cool Whip makes it light in texture.  Yum.
Don't forget to keep these refridgerated.
